The Santiago's cake It is a typical Galician sweet whose special ingredient is almonds. This dessert is decorated with a cross on its surface, known as the Cruz de Santiago.
This traditional dessert is very easy to make and the children will love it for its sweet taste and the touch that the almond gives it. It is perfect for a family celebration.
- 4 eggs
- 250 gr. icing sugar
- 250 gr of almonds
- Flour
- Lemon
- Cinnamon
Tip: use a large mold for the cake as it must be thin and not lift too much.
1- Preheat the oven to 190º while you prepare the mixture. Beat 4 eggs in a bowl and add the icing sugar.
2- Pour 250 grams of chopped almond into a glass and beat it without turning the almond into powder, there must be bits.
3- Add the flour to the egg, a teaspoon of cinnamon and the zest of a lemon and beat again. Put the almond with the mixture and continue mixing.
5- Put a little butter in the base of a mold and pour the mixture. Let it bake for 20-30 minutes at 190º. Put the template of the cross of Santiago and pour icing sugar on the surface. Enjoy your meal!
